Austin AECOM provided programming, design, equipment selections and technical details for a project in Shanghai, China. Our sister company Maunsell, provided the final engineering and construction management for this $1 million project. YUM had been producing all their pizza dough at each restaurant (hundreds of different locations) within the Shanghai metropolitan area.

The production rate for this 20,000-sq-ft facility is 4 million dough balls a year. This facility includes storage areas, process area with dough mixing and extrusion, cold hold and fermentation, employee areas and tray cleaning rooms. The project design started in April 2006 with completion of construction in September 2006 and full production in October.

YUM considers this facility a model for future development of centralized dough production for all their facilities world wide. The centralized facility has allowed YUM to reduce costs, improve quality and redevelop dough process areas within the restaurants for other uses.

In 2007, Austin AECOM and Maunsell will be undertaking the design and construction management of an 80,000-sq-ft Egg Tart shell manufacturing facility of at an estimated cost of $3 million which will be located in Shanghai area. Critical work by Austin AECOM will include the evaluation of different options for automation of the process with cost analysis and quality evaluation of options.
